The cafeteria

In order to prevent the spread of COVID-19 (the novel coronavirus), when using the SAPHIR ODORIKO cafeteria:

・ Masks should be worn while on the train, except when eating and drinking.
・ The number of people who can use the cafeteria is limited.
・ Payment with SAPHIR Pay is limited to online payments, pay on the train cannot be selected.

Born in Tokyo. Trained at Uwotoku, a famous Japanese restaurant in Kagurazaka, before striking out on his own at the age of 28. He opened his own restaurant, DEN, in Jimbocho. It trended as one of the few places that combine the flavors of a traditional Japanese restaurant, the fun style of an izakaya (Japanese-style pub), and a relaxed atmosphere that overseas visitors will also find comfortable. DEN moved to its present location in Gaienmae in 2016. It was awarded two stars in the MICHELIN Guide Tokyo 2020, and earned third place in Asia's 50 Best Restaurants 2020, making it the highest ranked restaurant in Japan. Zaiyu Hasegawa is a chef who is now very much in the global spotlight.

The intentions and concept behind his choices

  • - There is a limited number of noodles servings available for each reservation period.
    If you would like to order noodles, please make an advance reservation via SAPHIR Pay.
  • - Depending on the number of advance reservations, it may be possible to make a same-day reservation while you are on the train. Please ask the attendant.
    Same-day reservations are not available when the cafeteria (Car No.4) is full. We appreciate your understanding.
  • - Passengers traveling in the Premium Green Car (Car No.1) or the Green Cars (Cars No.5 through 8) will be served their noodles in the cafeteria (Car No.4).
  • - Noodles will be delivered to the compartments of passengers traveling in the Green Car private compartments (Cars No.2 and 3).

  • Show the voucher QR code to the attendant and get your items
